Cheesy Jalapeño Chicken

Ok. This one got a unanimous thumbs down. I like all the ingredients, but somehow it wasn’t so good. Maybe it was something I did. Next time I would leave the cream cheese out And maybe put some sour cream on top. Let me know if you make this or if you have some suggestions.

CHEESY JALAPEÑO CHICKEN

INGREDIENTS:

6 boneless, skinless chicken breasts (1 to 1 1/2 pounds), sliced in half lengthwise.

1/2 teaspoon garlic powder

Pinch of salt

4 jalapeños

6 ounces cream cheese, softened

1 cup shredded cheddar cheese

DIRECTIONS

Preheat the oven to 345F

Place the chicken slices evenly in a large casserole dish and sprinkle with the garlic powder and salt.

Dice 3 of the jalapeños. In a small bowl, mix them with the cream cheese. Spread the mixture over the chicken.

Top with the cheddar. Cover the dish with foil and bake for 30 minutes.

Remove the foil and bake for 10 minutes, or until the chicken is cooked through and reaches an internal temperature of 165F.

Thinly slice the last jalapeño and scatter it on top for a fresh kick of heat.
