Cilantro Cauliflower Rice

I just made this to accompany dinner tonight and it is absolutely delicious. Both my mom and dad loved it, too! My mom doesn’t like cilantro so I just used parsley ’cause that’s all I had on hand. You can put whatever herbs or spices you like in it, but what I love about this recipe is how absolutely simple it is to make. Plus it’s healthy and only takes 15 minutes.. Soooo gooooood!

I’m taking this recipe and picture directly from The Keto Diet Cookbook by Dr. Josh Axe. I’m not on a Keto diet, but I found it at a thrift store for a dollar. A dollar! And I have found the recipes to be spot on good and easy to make.

CILANTRO CAULIFLOWER RICE

Serves 4 / Time: 15 minutes

INGREDIENTS

1 large cauliflower

1 tablespoon avocado oil (I used olive oil and it was totally fine)

1 teaspoon sea salk

1 bunch cilantro, chopped (I used parsley)

Plus I added a lot of fresh ground black pepper because I love pepper!

DIRECTIONS

Remove the stem and chop the cauliflower. Put it in a food processor and pulse several times, until the cauliflower las an almost rice-like texture.

Heat a large skillet over medium heat and add the avocado oil. Add the riced cauliflower and cook for about 10 minutes, until softened.

Stir in the salt and cilantro.

Remove from the heat and serve warm.
