Wings were a big part of growing up. About once a month my dad would come home with a big tray of chicken wings. The excitement in the house would buzz. My dad would cut them up and my mom would fry them. At the time the only thing we put on them was salt. And they were delicious.

So when i saw this recipe I knew I had to make them. Turns out they were delicious!! Baked not fried. I made two different batches. One with Louisiana Hot Sauce and the other with Cholula. They were both a hit. I would’ve preferred hotter, but my mom and dad like a more moderate heat.

THE VERDICT: 3 thumbs up

Keto Buffalo Wings

INGREDIENTS:

6 whole chicken wings

1 tablespoon avocado oil

1 teaspoon sea salt

4 tablespoons grass-fed butter or ghee

1/4 cup hot sauce of your choice

1 garlic clove, minced, or 1 teaspoon garlic powder

DIRECTIONS:

Preheat the oven to 400F

In a bowl, toss the chicken wings in the avocado oil and sea salt. Set a wire rack on a baking sheet and arrange the chicken wings with space left in between them.

Bake for 20 minutes. Increase the oven temperature to 425F and bake for 10 minutes. Be sure the chicken is cooked through and the internal temperature reaches 165F.

In a small saucepan over medium low heat, place the butter or ghee, hot sauce, and mince garlic and heat, stirring frequently, until the butter has melted.

Toss the chicken wings in the warm sauce and serve immediately.
