A delightful surprise. Flavorful. Simple. Delicious. Honestly, if it weren’t for the picture I probably wouldn’t have made them. I like radishes, but never considered roasting them.
THE VERDICT: 3 thumbs up
I paired this with Cauliflower Cilantro Rice
ROASTED RADISHES
Serves: 4 / Time: 45 minutes
INGREDIENTS:
2 bunches red radishes
1 tablespoon avocado oil
2 teaspoons dried thyme
1 teaspoon sea salt
DIRECTIONS
Preheat the oven to 425F
Stem and clean the radishes
Slice them in half and toss in the avocado oil, thyme, and salt. Place on a baking sheet.
Roast in the oven for 40 minutes, stirring them halfway through.
Serve Warm.
