Timing, Spicing & Proportion

My mom has many wonderful qualities, but her cooking is at the top. If you want good food that fills your belly and comforts your soul then come have dinner when my mom cooks. Her chili is the best in all the land, but she’s also known for her chicken soup, ham and beans, and cabbage & noodles. Let’s just say it’s a real blast at the McKeever household! LOL

If you want something adventurous, mysterious, or experimental come to dinner when I’m cooking. Years ago I confessed to a good friend that I’m a terrible cook. After experiencing my cooking he said, “You’re not a terrible cook. You just have trouble with timing, spices, and proportion.” I couldn’t find the lie.

Recently, my mom and I went thrift store shopping, which is a pastime that she and I have shared my whole life. It happened to be National Thrift Store Day and our favorite thrift store was having a 1/2 off sale. Among the loot that i came home with was a cookbook. A Keto cookbook to be more specific. No, I am not keto nor plan on converting. But the pictures were pretty! The ingredients were healthy and the instructions were simple. Plus, my dad has type 2 diabetes and all the recipes in this book were things he could eat!

So I decided that over the course the rest of the year to make every recipe in the book. The rule is that I would follow every recipe (at least for the first time) exactly like the recipe instructs. (I tend to look at recipes and do my own thing thinking that I know what I’m doing when in fact I know better). So far I’ve made 10 recipes from the book and they have been an absolute success. Even my mom complimented my cooking, which is a big deal because my mother is relentlessly and brutally honest about if she likes something or not.

I am putting the recipes on my blog as I make them with a little review of my experience and what I thought about the recipe. Here’s a few to get you started. I’d LOVE to know if you try any of them and what you think.
